Whipped Fermented Honey (AKA "Bakers' Honey")
Occasionally we have a batch of fermented honey which we either sell as "Baker's Honey" or we slow down the fermentation and whip this honey into a marshmallowy whip for spreading onto toast (note: it is delightful with goat's cheese!) This honey is sweet like wildflower honey with citrus tones. It is beloved by baker's for that reason. (How does honey ferment? In a nutshell fermented honey is honey with a slightly higher water content. Bees bring in nectar from flowers normally registering at 95% water content. Ideally the bees fan down the nectar to 17% before they cap over and seal with a layer of wax. Sometimes not all of the honey is capped and it makes its way, via human hands, into the extracted batch. The batch then begins to ferment. In the past fermented honey was considered "spolied" until bakers discovered its unique addition to baked products and people began to go bonkers, rightfully so, over the benefits of fermented foods.)
