Straight Off the Press
This is the rawest honey on Earth! When we have frames with both pollen and honey we remove the pollen rich, honey laden wax, and place it in an old fashioned fruit press. The next step is to grab some jars and press both the honey and the pollen out of the wax. We fill the jars at the spout of the press and do not strain the honey and pollen. When allowed to granulate a 1/4" layer of wax, pollen, and propolis forms a neat capping on top of the creamy honey-pollen mixture. The wax, called "farmers gum" is chewable and can also be swallowed. This we recommend to the folks looking for help with seasonal allergies. It works for us. Since this mixture is not strained, the pollen begins a fermentation process and gives the honey an apricot taste. It is delicious. Please keep in a cool place (refrigerator is the best. Best straight from the spoon. Not the best for adding to tea since there are wax particles in this bee heavenly concoction. 12 ounces
